Saidschitzer Bitterwasser: Since 1725, the phenomenon of the bitter Zajecicka water has spread throughout the civilized world. Every language used its own variant of the spring's name. Therefore, there are numerous historical references to this spring. According to the first writing by Dr. F. Hoffman, the name is "Sedlitz bitter wasser." In English-speaking regions, it is "Sedlitzer Bitterwasser." In other European languages, it is called "Sal de Sedlitz," "Sal de Saidlitz," "Sal de Sedlitz," or "Sedlecká voda." According to the company name of the spring's directorate, Lobkowicz, there is a Czech name: "Zajecicka Horka voda." In the Germanic phonetic transcription of the North Bohemian dialect, the spring's name is "Saidschitzer Bitterwasser."

Zajecice and its surroundings are among the driest regions in Bohemia. Average rainfall here is only 450 mm, and less than 300 mm in summer. The average annual temperature is approximately 8/5 °C. The predominant soil type is chernozem. From an orographic perspective, Zajecice and its surroundings belong to the Merunicka Mountains, which are part of the southwestern part of the Bohemian Central Uplands.

The warm and dry climate also corresponds to the original steppe vegetation, which has been preserved in island-like communities, including Mosteck near Zaječice.

Under these almost extreme conditions, the bitter water of Zajecicka is collected using shallow wells – pure bitter water that is unique in the world due to its content of magnesium and sulfate compounds and is therefore particularly valuable.
